Chewy coconut cookies with a tropical accent are the perfect sweet snack when
you’re craving something light. You’ll be up and running in less than 20 minutes!

Ingredients:
1 1/4 C Everything – Mold
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 1/3 cups coconut flakes
Oven to 350 Preheat degrees F
Place flour, baking powder and salt in a small bowl. Mix and reserve.
In another medium bowl, add butter, brown sugar and white sugar.Grind them
until smooth.
Add egg and vanilla. Beat until the mixture is light and fluffy.
Add the flour little by little until the mixture is well blended. Mix with coconut.
Place 3 inches apart on an ungreased baking sheet.
Cook until lightly browned, about 8-12 minutes. Transfer to a rack and let cool.
VARIATIONS AND STORAGE
Variations:
Add 1 cup chopped walnuts to enhance flavor and texture. Almonds, pecans, and
macadamia nuts are good choices.Pour
coconut glaze on top. Prepare the icing by mixing coconut milk and powdered
sugar.
You can also use chocolate icing or even dip half of the cookie in chocolate and
sprinkle the chocolate with coconut flakes or sea salt.
Add the caramel chips to the mixture.
Add the chocolate pieces.
Brown Sugar moisturizes and creates a soft cookie. If you increase the brown sugar
to ¾ cup and reduce the white brown sugar to ¼ cup, you can make them even
more moist and fluffy.
Add additional coconut flavor by replacing 1/2 teaspoon vanilla extract with 1/2
teaspoon coconut extract in the batter.
FREEZE CAKE: Like other cookies, the dough can be frozen and baked later.
Simply place the dough on a baking sheet and place the baking sheet in the
freezer.Once the dough is firm, place it in a Ziploc. Freeze for 1 to 2 months. Cook as
directed, adding a few extra minutes if making from frozen.
SHOP: Serve hot or at room temperature. Store cookies in an airtight container at
room temperature for 3-5 days.
