INGREDIENTS
2 large green Granny Smith apples, peeled and coarsely chopped
2-1/2 cups flour, divided
1/2 cup packed brown sugar
1 cinnamon powder
1/4 cup cold butter
1 cup chopped pecans
1/2 baking soda
1/2 cup butter, softened
1 cup granulated sugar
2 egg
2 vanilla
1 cup sour cream

Heat the oven to 350ºF.

Microwave apples in microwave-safe bowl on HIGH 1 min. or until crisp-tender; drain them and let them cool. Meanwhile, mix 1/2 cup flour, brown sugar and cinnamon in a medium bowl. Add 1/4 cup cold butter and mix, cutting with 2 knives or a pastry blender, until mixture resembles coarse crumbs. Add the walnuts.

Mix the remaining flour, baking powder and baking soda. Beat 1/2 cup of the softened butter with the granulated sugar in a large bowl with an electric mixer until light and fluffy. Add the eggs and vanilla. Add the flour mixture alternating with the sour cream, beating until blended after each addition. Add the apples. Pour the mixture into a 10-inch center tube mold. or in a fluted one with a central tube for 12 cups, buttered and floured. Sprinkle nut mixture over cake.

Bake for 50 to 60 min. or until toothpick inserted in center comes out clean. Let it cool in the mold. Using a knife, loosen the cake from the sides of the pan. Invert onto metal rack; remove the mold carefully. Let the cake cool completely.
